European sturgeon spend most of their lives in coastal and estuarine waters but use large rivers for reproduction. Juveniles initially remain in estuaries before progressively moving to sea.
They are long-lived, slow-growing migratory fish. Adults undertake major upstream migrations to reach suitable spawning grounds.
They feed mainly on or near the bottom on crustaceans, molluscs, polychaete worms and, depending on body size, small fish.
Spawning takes place in large rivers over stony or gravel substrates exposed to strong current. After spawning, adults return toward estuarine and marine areas.
