Burbot inhabit cool, well-oxygenated waters ranging from large deep lakes and major rivers to some streams and estuaries. During summer they frequently seek deeper water.
They are mainly crepuscular and nocturnal. They shelter under rocks, in bank crevices, among tree roots or vegetation and may move into shallower water to feed.
Smaller individuals consume insect larvae, crustaceans, molluscs and other invertebrates. As they grow, burbot become increasingly piscivorous.
Spawning takes place in winter, generally in very cold water. Adults may undertake short migrations and gather in groups while releasing eggs and milt near the bottom.
